"stainless vs. copper"

"My question is whether a stainless steel roof installed over a flat seam copper roof is in jeopardy of corroding due to adverse corrosive type reaction due to disimilar metals."

You did not mention which type of stainless steel you were considering. However, if your intention was to use 304SS, the austenitic stainless steels are normally slightly cathodic to copper. Therefore, if the intended application is atmospheric service, and the atmosphere is not heavy industrial or polluted, 304SS should provide adequate service.
