Can anyone offer an explanation of why Stainless Steel steam ovens should suffer from excessive surface pitting.

Andy: Stainless steels usually pit due to exposure to chlorides. You should check the chloride content of the water being used to produce the steam. Hope this helps! David Hendrix The Hendrix Group Inc.
